Project title: VistaMilkDigest

Overview: Cathal is a Teagasc Walsh Scholar based in the Teagasc Food Research Centre, Moorepark, the School of Food and Nutritional Sciences, University College Cork (UCC) and the VistaMilk SFI Research Centre. He graduated from Cork Institute of Technology (CIT) in 2020 with a BsC (Honours) Degree in Nutrition and Health Science. He has previous experience working in the dairy industry in Ireland.

Cathal’s project is funded within VistaMilk. The aim of his PhD project is to track dairy proteins and products as they transit the gut and across the intestinal barrier to promote lifelong health. Cathal will perform this tracking using in vitro models of the gastrointestinal tract, cell lines that represent the intestinal barrier and cellular assays that measure biomarkers of health. Cathal has a keen interest in all aspects of health, nutrition, food digestion and food processing.
