Project Title: Extraction and characterization of bioactives and carbohydrates from seaweeds and seagrasses for food-related applications
Overview: Seaweeds and seagrasses are sources of polysaccharides such as agar, alginates and carrageenans with applications in the food-field. Up to date, these compounds have been extracted using unsustainable traditional techniques and therefore, one of the current research interests is to use novel extraction techniques, for i.e. ultrasound and microwave assisted extraction, which are greener techniques that can also enhance yields, purity and rheological properties. I am music passionate from Asturias (Spain) that loves outdoor plans. In the future, I see myself applying potential research outcomes to industry development in order to exploit this crucial synergy.
