Project Title: InFoTech-Satiety


My project focuses on the influence of food texture on satiety. I am screening a variety of pulse flours, Irish cereals and hydrocolloids for their ability to increase satiety hormone production in vitro using enteroendocrine cell lines. The results will help design novel foods, which will be tracked with in vitro models for their bioavailability. The aim of the project is to help develop structured foods that are inherently healthier.
