Project Title: Real-time characterization of rehydration of High protein Spray Dried powder
Overview: In project DAIRYDRY, we are developing new analytical tools and baseline to understand the scientific basis of powder formation and hydration properties and key formulation-process conditions. With completion of this project, we will have next generation high-protein spray-dried dairy powders with enhanced hydration properties.
My role in the project is to develop techniques to visualize and characterise high milk-protein powder (HMPP), at Nano and micro-scale, using Atomic Force Microscopy (AFM).Currently I am working on understanding topographic (AFM) and depth profiling of macro-constituents of powder particles to elucidate surface/bulk effects and gain insight into powder formation and to correlate structural components with their chemical composition.
I am Indian, and have background in Physics, Mathematics, Computer Science and Dairy Technology. I had my MS in Food Technology and Postharvest Engineering from KU Leuven, Belgium. I am passionate about AFM and microstructure of food material and how macromolecules form a matrix at micro and Nano-scale. As a hobby, I like travelling exploring and I love reading and sketching.
