William P. McCarthy

Project Title: Understanding the Entry, Partition, and Fate of Chlorate in Dairy Processes

Overview: I am researching in chlorate in the dairy process which is of high commercial and industrial interest with new regulations being put forward by EFSA. Through my research I will gain specialist knowledge in membrane separation, analytical techniques to detect ppb concentrations, protein interactions, industrial processing, microbiology and techniques like shotgun sequencing and 16sRNA.

I am currently undertaking my PhD in conjunction with the Technological University Dublin (TUD) (formerly Dublin Institute of Technology (DIT)) and Teagasc. I completed my undergraduate University College Cork and hold a BSc. in Chemistry of Pharmaceutical Compounds (CPC), where I gained an interest in toxicology and perused this project because of the adverse health effects associated with chlorate.

Outside of the lab I like to get involved in dissemination/outreach through running of the monthly PubhD Cork (Brings Research to the Public (House)), industrial knowledge share days, and instructing for the Centre for Talented Youth Ireland Program amongst other activities.
