Project Title: Digestive behaviour of alternative plant-based proteins- UProDigest
Overview: Neha’s research interests are interdisciplinary in terms of subjects such as industrial bioprocessing, food chemistry and microbiology. But Neha would like to develop her understanding of the relationship between the structure of food molecules and their functional properties, to improve the nutritional aspect of foods and its sustainability. Neha has hands on experience on few instruments like fourier transform infrared spectroscopy (FTIR), X-Ray Diffraction (XRD), Gas chromatography–mass spectrometry (GC-MS), Thermogravimetric Analyzer (TGA), and Zetasizer (Particle Size Analyzer). Neha is gaining experience in digestibility of alternative plant based proteins. The Neha’s research work aims to create new scientific and technological knowledge with long-term potential to re-engineer Ireland’s agro-ecological system and aid the development of a circular and regenerative bioeconomy.
Neha is from India and she likes to cook, explore new places, sing and play an instrument.
