Food Chemistry & Technology
The Food Chemistry & Technology Department is located at both the Teagasc Food Research Centres, with dairy science carried out primarily in Teagasc Moorepark and novel process and extraction technology research at Teagasc Ashtown. The Food Chemistry and Technology department leads a spoke the VistaMilk SFI Research Centre and a research focus area in the Enterprise Ireland-funded Dairy Processing Technology Centre.
Main Programme Objectives
- To understand proteins, minerals and other ingredient interactions in food systems.
- To understand the impact of ingredient composition, processing and storage conditions on micro- and macro-structural properties and how this impacts the quality of the final product.
- To facilitate product modification and process optimisation through intelligent process design.
- To study structure-function dynamics in complex food matrices and ascertain the impact of primary production, processing and storage on nutrient delivery in the gastrointestinal tract.
- To develop sustainable approaches to food processing focused on climate and societal impacts of food manufacture.
