Stand 1: Food Bioprocessing: From traditional foods to precision fermentation

Fermentation of food has been used since ancient times to extend the shelf-life and enhance safety of a wide variety of primary foods derived from plants and animals. In the process the sensory attributes of the foods, including their flavour, aroma and texture quality changed leading to the development of a huge diversity of fermented foods produced globally today. Fermentation continues to be a key processing technology in the modern food industry where the health benefits of such foods is now coming to the fore and fermentation is applied in a very targeted manner to produce foods and food ingredients with defined techno- and/or bio- functional properties.

Unlocking the potential: Innovative products from waste material

Waste material occurs at various stages of the food supply chain, from production and processing to distribution and consumption, we will present a selection of projects that focus on unlocking the potential of waste biomass and identifying innovative non-food applications. Turning waste biomass into value is not only environmentally responsible but also a tool to conserve resources and contribute to a more sustainable future.

Technology Platforms: Discovering function and effect

Despite advances in bio-processing, teasing apart functional impacts remains challenging. Recent years have seen significant developments in the area of high-throughput sequencing technologies and microbial genomics. Teagasc possesses comprehensive sequencing, microbial genomics, fermentation, in vitro modelling and analytics facilities. These tools feed into activities across the spectrum of fermentation, health benefits and green innovation.
