Dairy research in the Food Chemistry and Technology Department takes place primarily in Moorepark. Current research themes include protein chemistry, development of innovative cheese products, milk fraction/separation technologies, behaviour of dairy products during concentration, innovation in drying technologies and post-drying modification of powder functionality.

The Food Chemistry and Technology department leads a research pillar of the Dairy Processing Technology Centre.
