Presented by INFOGEST Working Group 5 “Amylase and Starch Digestion”, this special focus on starch featured a presentation from Prof Serge Perez (Research Centre for Plant Macromolecules (France) and Founder of Glycopedia.EU), entitled “Starch: An iconoclast view on amylopectin”.
The webinar was moderated by Dr André Brodkorb of Teagasc and Prof. Caroline Orfila of the University of Leeds.
