On World Microbiome Day we celebrate all things microbial, all around the world.
Microorganisms (e.g. bacteria, fungi, viruses, archaea, etc.) can be found everywhere in and on plants, animals, water, soil, food and humans. Within each of those habitats, microorganisms live together in communities called microbiomes. Microbiomes influence the health of humans and the entire planet therefore, scientists are exploring how these communities of organisms coexist with us and with our environment.
The theme for World Microbiome Day 2021 is Sustainability with a focus on how microbes can contribute to a sustainable future.
For World Microbiome Day on June 27th APC Microbiome Ireland SFI Research Centre is hosting Microbiome Friendly Brunch presented by Darina Allen in conversation with John Leech, an APC Microbiome Ireland SFI Research Centre PhD student who is based in Teagasc Food Research and a research officer with MASTER.
This very special online cookery demonstration will cover the following dishes - Water Kefir and Milk Kefir, Yoghurt- Labneh, Honey, Almonds, Porridge, Shakshuka with Sourdough, Granola and Pan Grilled Mackerel Miso. The cookery demonstration will launch at 11am on World Microbiome Day and be available on demand afterwards.
Darina and John will discuss how the various ingredients benefit the microbiome as the cookery demonstration progresses. They will also discuss sustainability - the theme for World Microbiome Day 2021 - and a subject which is high on the agenda for Darina Allen and Ballymaloe Cookery School.

More about Darina Allen
Darina Allen established Ballymaloe Cookery School in 1983 with her brother Rory O'Connell. Author of over 10 books and presenter on 6 Television series, her main passion and her daily task is to impart her knowledge to the students at the Ballymaloe Cookery School.
Darina Allen is Ireland’s best known cook and a best-selling author who presented nine series of her cookery programme, *Simply Delicious*, on television in Ireland. She is a passionate and committed teacher, and her awards have included:
- Good Food Ireland’s Cookery School of the Year 2012/2013
- José Navarro Foundation Award at the Green Awards 2011
- IACP Cooking Teacher of theYear 2005.
A tireless ambassador for Irish food both at home and abroad, Darina has been instrumental in setting up the Farmers’ Market Movement in Ireland. Slow Food is a passion for her, and she is the councillor for Ireland in the Slow Food Movement and President of East Cork Convivium of Slow Food. Through the East Cork Educational Fund, she runs a programme for local primary schools to help local children learn about food from garden to plate.
In 2013 she helped launch the Ballymaloe Literary Festival of Food and Wine which plays host to a stellar line up of chefs and writers and has very quickly become an unmissable event on the international culinary calendar.
