Standard Operating Procedure for Microbiological Examination for Checks of Cleaning and Disinfection in Meat Establishments

To ensure that microbiological examinations of utensils, fittings and surfaces, carried out as part of a plant “own check” programme for the control of checks on cleaning and disinfection in meat establishments are carried out in accordance with the requirements of good manufacturing practice and Commission Regulation no. 2073/2005 on the microbiological criteria of foodstuffs.
